Cauliflower Mashed Potatoes Recipe

This recipe for cauliflower ‘mashed potatoes’ is as close to the real thing—in terms of texture and great flavor—as you can get.  And the best part about this recipe?  Besides the fact that there’s no added butter or starchy, glucose-laden potatoes, vegetables from the cruciferous family such as cabbage, broccoli, and cauliflower are incredibly rich in nutrients, and have been linked with lowering the risk of cancer.


Serves 4

1 large cauliflower, roughly chopped
3 garlic cloves
1 tbsp fresh thyme leaves
1 tbsp fresh parsley
1 tbsp fresh chives, chopped
2 (14oz) cans of chicken broth
Salt and pepper to taste


1. Combine cauliflower, garlic, and broth into a large sauce pan (add water if the broth does not cover the contents).

2. Bring to a boil, then reduce heat to medium low for about 15 minutes, or until cauliflower breaks apart easily with a fork.

3. Use an immersion blender or transfer to a food processor to blend the ingredients together. Add in the seasonings and stir. Serve hot and enjoy!
