Cauliflower Mashed Potatoes Recipe

This recipe for cauliflower “mashed potatoes” is as close to the real thing — in terms of texture and great flavor — as you can get. And the best part about this recipe? Besides the fact that there’s no added butter or starchy, glucose-laden potatoes, vegetables from the cruciferous family such as cabbage, broccoli, and cauliflower are incredibly rich in nutrients, and have been linked with lowering the risk for cancer.

ingredients

Serves 4

1 large cauliflower, roughly chopped
3 garlic cloves
1 tbsp fresh thyme leaves
1 tbsp fresh parsley
1 tbsp fresh chives, chopped
2 (14 oz) cans of chicken broth
Salt and pepper to taste

Instructions

1. Combine cauliflower, garlic, and broth in a large sauce pan (add water if the broth does not cover the contents).

2. Bring to a boil, then reduce heat to medium-low for 15 minutes, or until cauliflower breaks apart easily with a fork.

3. Use an immersion blender or transfer mixture to a food processor to blend the ingredients together. Add in the seasonings and stir. Serve hot and enjoy!
