Easy Baked Turkey Meatballs

These easy baked turkey meatballs are packed with flavor from fresh herbs and ground walnuts.  Devoid of the breadcrumbs and fatty ground beef that are traditionally found in meatballs, this turkey alternative is bound to be a guilt-free hit at your social engagements this holiday season.


2 lbs ground turkey
1 cup chopped parsley
2 tablespoons fresh sage, chopped
3 sprigs fresh thyme
1 tablespoon fresh oregano, chopped
1/2 cup ground walnuts (pulse in food processor until crumbled)
1 egg, beaten
1/4 cup cottage cheese
1/3 cup parmesan cheese

Preheat oven to 400 degrees.  Combine all ingredients and form into 1 to 2-inch balls.  Place in a baking dish and bake for 15-20 minutes or until cooked through.
