Grainless Gingerbread Cookies

Today we’re sharing another recipe that’s sure to put you in the Christmas spirit.

If you have fond memories of Grandma’s gingerbread cookies, but her recipe doesn’t quite fit into a healthy diet, this is the answer for you.

This recipe saves time and effort — only a few ingredients are needed for sugar-free, vegan, and gluten-free treats!
 

Ingredients:

  • 1 1/4 cup packed blanched almond flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/8 tsp ground cloves
  • 1 tbs ground ginger
  • 3 tbs unsulphured molasses
  • 3 tbs coconut oil, melted and cooled

 

Instructions:

1. Preheat the oven to 350°F.

2. Add the dry ingredients to a bowl and mix them together.

3. Pour the molasses into the bowl of dry ingredients and mix thoroughly.

4. Scoop out dough with a spoon to measure cookies onto a baking sheet. Make sure to shape them, as they don’t change shape as they bake.

5. Bake for 10-14 minutes, or until the edges have browned.

6. Let your cookies cool for 10 minutes before removing from the cookie sheet.
