This holiday season, branch away from the standard graham cracker pie crust and try creating your own using ground nuts. More nutritious and interesting!
1 cup whole raw almonds
1 cup whole raw cashews
1 cup medjool dates, pitted
Soak nuts in water for 1 hour. Drain and grind in a food processor. Add dates to food processor until mixture is fine but not a powder. Press firmly into a pie tin. *Any type of nut can be used.
lemon cashew pie filling
3 cups soaked raw cashews
½ cup fresh lemon juice
3/4 cup raw honey (to keep it vegan use agave nectar)
3/4 cup coconut oil (warmed to liquid)
1 cup pitted medjool dates
½ tsp salt
1 tsp vanilla
Add ingredients in the order listed to a food processor and blend until completely smooth and thick like cheesecake batter. Add the batter on top of the nut crust and freeze for 1 hour, and it will be set and ready to eat! You can also leave it in the refrigerator for longer to set up.
