Homemade Wheat Free Pie Crust

This holiday season, branch away from the standard graham cracker pie crust and try creating your own using ground nuts.  More nutritious and interesting!

pie crust

1 cup whole raw almonds
1 cup whole raw cashews
1 cup medjool dates, pitted

Soak nuts in water for one hour.  Drain and grind in a food processor.  Add dates to food processor until mixture is fine but not a powder.  Press firmly into a pie tin.  *Any type of nut can be used.

lemon cashew pie filling

3 cups soaked raw cashews
1/2 cup fresh squeezed lemon juice
3/4 cup raw honey (to keep it vegan use agave nectar)
3/4 cup coconut oil (warmed to liquid)
1 cup pitted medjool dates
1/2 tsp salt
1 tsp vanilla

Add in order listed to a food processor and blend until completely smooth and thick like cheesecake batter. Add the batter on top of the nut crust and freeze for 1 hour and it will be set and ready to eat! You can also leave it in the refrigerator for longer to set up.
