A friend introduced me to this recipe and I’ve been absolutely hooked ever since I first tried it. It’s amazing that some of the simplest and most nutritious ingredients can be combined to create a best-of-both-worlds, healthy-and-delicious, packed-with-protein appetizer. This whipped peanut butter and greek yogurt dip is slightly sweet, and can be served with both fruits and vegetables. And it only takes 2 minutes to make!
4 tbsp of peanut butter (the natural version!)
1 cup plain greek yogurt
Combine the two ingredients using a food processor or hand mixer until the texture is light and fluffy. Enjoy with carrots, cucumber slices, cauliflower, celery, apples, strawberries, and the like. Or, double the recipe and use as pie filling for a healthier version of peanut butter pie.
