Turkey Bacon Stuffed Endives

Every now and then, life demands a special treat. Go ahead and indulge, but possibly a smaller version of the real thing. And make it an exceptional treat to be savored on an occasional, not daily basis.

Thank goodness for occasional indulgences, because last week the members of our new office participated in a Beer and Bacon Festival.  Eager to introduce a slightly more wholesome bacon dish (some of the worst offenders included chocolate chip & bacon cookies, bacon & maple ice cream, and bacon-wrapped meatballs), Vital Plan created a bright, fresh appetizer using Vital Plan-approved ingredients.  This dip combines Greek yogurt (rather than mayonnaise or cream cheese, like most creamy dips), bacon, bleu cheese, dried cranberries, and toasted pine nuts in a wheat-free endive scoop.


1 cup plain Greek yogurt
¼ cup bleu cheese crumbles
¼ cup dried cranberries
¼ cup toasted pine nuts
6 slices of cooked bacon
1 tbsp chopped, fresh thyme
1 tsp chopped, fresh oregano
Salt & pepper
Endives (washed and separated)

Combine ingredients and spoon into endive leaves. Refrigerate for 30 minutes and serve.
