Stuffing is a holiday staple in most households, but is an off-limits dish for those with gluten sensitivities. Here’s a wheat-free stuffing recipe, made with cornbread, turkey bacon, and tons of vegetables for anyone avoiding wheat consumption.

ingredients

Gluten-free cornbread mix
1½ cups chopped celery
1½ cups diced onion
1 lb turkey bacon
¼ cup dried cranberries
¼ cup dried apricots, chopped
Salt and pepper to taste

Optional: diced carrots, zucchini, squash, and other vegetables, apples, pears, dried fruit, etc.

instructions

Prepare cornbread as directed on box. Meanwhile, begin cooking the turkey bacon in a large frying pan. Add celery and onion, stirring frequently until cooked through. Crumble cornbread and combine with other ingredients. Return to oven for 10 minutes.
