An exotic and delicious light meal or side dish that is perfectly fitting for warm weather!
Ingredients
Pre-washed mixed greens
Ripe Pear, thinly sliced
Ripe Avocado cubed
Blue cheese crumbles
Pistachios (chopped walnuts or pecans will also be delicious)
Creamy Balsamic Dressing
White Balsamic Vinegar, 2 tbsp
Olive Oil, 2 tbsp
Tahini, 2 tbsp
Fresh Basil, 1 tsp minced
Ground pepper & sea salt
Garlic, minced (optional)
Combine all dressing ingredients in a jar and shake thoroughly. Toss dressing with mixed greens in a bowl and spoon onto a plate. Arrange pear and avocado on top and finish with a sprinkle of nuts.
