Using an outside-the-box healthy ingredient swap, we utilized steamed cauliflower to create an entirely wheat-free cauliflower crust pizza. Topped with lots of additional vegetables, this alternative to traditional pizza is relatively guilt-free (just go easy on the cheese!), and surprisingly tasty.
Crust Ingredients
(yields 2 servings)
1 head small cauliflower, washed and trimmed
1 egg, beaten
3/4 cup shredded cheese
2 tbsp fresh basil, chopped
2 tbsp fresh oregano, chopped
1 tbsp fresh garlic, chopped
Salt & pepper

Topping Ingredients
Assorted sliced vegetables
1 cup shredded cheese
1 tbsp fresh basil, chopped
Pizza sauce

Directions
1. Heat oven to 400 F. Using a food processor, cheese grater, or knife, chop cauliflower into rice-sized pieces. Place in a microwave-safe bowl and steam in microwave for 8 minutes or until cooked through (no water added).
2. Combine all crust ingredients and spread onto greased cookie sheet. Crust should be about ¼ inch thick.
3. Bake for 25 minutes, or until edges are golden brown. Remove from oven and add pizza sauce, cheese, and other toppings.
4. Return to oven for 10 mins, or until cheese is melted. Enjoy!
