If you have fond memories of Grandma's gingerbread cookies, but her recipe doesn't quite fit into a healthy diet, this is the answer for you.
This recipe saves time and effort – only a few ingredients are needed for sugar-free, vegan, and gluten-free treats!
Ingredients:
- 1¼ cup packed blanched almond flour
- ½ tsp baking powder
- ½ tsp baking soda
- 1¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp ground cloves
- 1 tsp ground ginger
- 3 tsp unsulphured molasses
- 3 tsp coconut oil, melted and cooled
Instructions:
1. Heat the oven to 350°F.
2. Combine the dry ingredients in a bowl.
3. Pour the molasses into the bowl of dry ingredients and mix thoroughly.
4. Scoop out dough with a spoon to measure cookies onto a baking sheet. Make sure to shape them, as they don’t change shape as they bake.
5. Bake for 10-14 minutes, or until the edges have browned.
6. Let your cookies cool for 10 minutes before removing from the cookie sheet.
7. Enjoy!
